Create the Yeast Starter at least 24 hours before crushing grapes.

This recipe is sufficient for 10 gallons. Adjust according to your yield.

Items required:

Orange Juice

Water

Table Sugar

Yeast (based on grape)

Yeast Nutrient

One gallon or 1/2 gallon glass jug

Stopper Cylinder Lock

Boil 1 cup of orange juice and 3 cups of water.

  • Cool the mixture. Add 2 tablespoons of sugar and 1 teaspoon of yeast nutrient.
  • Place the starter into a clean glass gallon or ½ gallon container that can accept a fermentation lock. Add yeast and and attach a fermentation lock. Keep in a warm (70-80 degree) location for 1-2 days. Add entire amount to must.
