Mango Wine


1 gallon


Here's the basic recipe:


4 lbs Ataulpo mangoes, very ripe

1 can Manila Nectar concentrate (Philippine Mango juice concentrate)

2.5 lbs sugar (or enough to make the final SG to 1.105)

2 lbs banana (Dole or Chiquita)

2 tsp acid blend

1 tsp pectic enzyme

Premier Cuvee yeast

Top off with enough water to make 1 gal and 1 Quart
