10 pounds cane sugar

1 gallon spring water

6 campden tablets

Wyeast Sake culture

4 tablespoons acid blend

1 ½ tsp tannin powder

6 tsp yeast nutrient

½ tsp ascorbic acid

5 oz. med. Toast American oak beans more sugar for feeding 1 ¼ tsp potassium sorbate
